I’m sorry to have been MIA for a while now! These last two weeks have been quite busy at times. It was a wonderful and productive weekend. Just not long enough. How is it already Monday again?
Saturday, aka Caturday, started with a nice bowl of oatmeal followed by a big mug of coffee that I was able to sip on slowly. One of the things I love about the weekend is kitty cuddles. I hate having to rush through the morning on work days!
These babies sure know how to relax!
Later that morning, I made my way down to our local Y to fit in an awesome workout session before getting on with my day.

I went to our lake house to check on it and enjoy it for a little while Saturday afternoon. Matt has been busy working on his race care, so I made it a quick trip. Kaci is amazing and has taken the lead on the big projects needed out there. Last week the new roof was completed!

I really hope the weather cooperates on our special day so our guests don’t have to sit under a tent during the ceremony. Autumn blue skies with sun shining down is one of life’s simplest pleasures.

I decided to splurge at the Juice Bar and chose “Orange You Glad” plus I added almond butter for protein. I slowly sipped on it while I shopped at Target. I could really make my wallet bleed in there if I wasn’t careful.
I took dinner over to Matt’s dad’s where he works on his car. Bed of romaine and radicchio topped with homemade chicken salad. Side of steamed Brussels sprouts, cucumber, grape tomatoes, and we split a gf mixed berry scone from Benefit Your Life Bakery. The Empty Cup Coffee House now carries their products!
We watched Ex Machina Saturday night, and we both were quite intrigued throughout the movie. However, I wasn’t a fan of the ending. Have any of you seen it?
Sunday started with this awesome spread: gf homestyle waffle topped with melted Sargento garlic herb monterrey jack cheese, avocado, and paprika + cayenne / gf blueberry waffle topped with cashew butter, Greek yogurt, cinnamon + clove. I cut into a fresh mango and split it between us.
Lunch included a sandwich filled with cottage cheese, adobo hummus, organic greens, and cucumber on organic gf bread from Target. We crunched on baby carrots, sweet pepper, apple, grape tomatoes, and a tangerine.
Matt was a sweetheart and changed the oil + filter in my car, topped off my brake fluid, changed my cabin air filter, and added washer fluid to the reservoir. Now I just need to take her through the car wash soon!
I finally went on a walk along the dogwood trail, provided thanks to the Dogwood Arts Festival, located in a neighborhood right across the street from us.
Unfortunately, I think our recent cold-snap messed with the blooms. But it was still an enjoyable walk.
I love Japanese maples. They are so rich in color!

This tree was gorgeous and kind of reminded me of the trees in Dr. Seuss’ The Lorax. 🙂
Mason is clearly part monkey. He loves his daddy!
Dinner included these swai fish fillets with Old Bay seasoning and butter.
We ate them with a bed of romaine and radicchio topped with sautéed green beans, scallions, celery, and quinoa. Jax photo-bomb!
For breakfast this morning, we enjoyed these individual frittatas made with a product called Scramble by Clever Foodies. We baked them last night then allowed them to cool before chilling them in the refrigerator.
We served them with cheesy polenta and an apple.
Such awful lighting thanks to being up before the sun, but they were really delicious!
