10 Day Salad Challenge + One Year Work Anniversary


Today marks two things: my one year anniversary at my job (this past year has flown by!) and the fifth day into the 10 Day Salad Challenge led by Brittany of Eating Bird Food. I already love making various types of salads for quick lunches, but this challenge has made it even more fun! I love having something to work towards. As Brittany has outlined, having at least one meal-sized salad daily is a wonderful way to ensure you consume a variety of vegetables, healthy fats, whole grain carbohydrates, and quality protein. Here are my first four entries, and *I’ll pop back in later to share my creation for today’s lunch. It’s not too late to join either, so check out her blog for a tremendous amount of inspiration and also begin tapping into your creativity as well!

romaine + radicchio, turmeric-roasted carrots, saute-steamed green beans with arribiata bruschetta, heirloom tomato, baked cod topped with a yogurt-mayo-horseradish-lemon sauce
spinach, avocado, sauerkraut, tomato, cucumber, lemon-habanero infused olive oil, & 1/2 beef, mushrrom, onion pasty with horseradish-spiced ketchup
wilted spinach, sauted green beans & crimini mushrooms, roasted peppers, Sabra hummus, ricotta, & dill Triscuits on the side + an apple for dessert
mixed spring greens, pearl couscous, organic green lentils with bruschetta, ricotta, parmesan, lemon habanero-infused olive oil + fresh cherries for dessert
