Thursday Eats + Treats

Hello, beautiful people! So, I upgraded my WordPress site and had to choose a new theme. If you don’t mind sharing, what are your thoughts on the design? Is it appealing and friendly to the eyes? I’m hoping it has jazzed up my site a little! 🙂 Unfortunately, my header is not sized appropriately, so that is something I am still working on correcting. Fingers crossed I can get it to still work in this theme!

Alrighty, on to the noms! On Wednesday, I was able to redeem a reward for a free 8-count grilled chicken nugget at Chick-fil-a, and I completed the meal with a salad and then fruit for later.


After purchasing the salad and fruit, and I had acquired enough points to redeem my first reward! It’s the little things, y’all. I happily ate my ‘Dream Cone’ then went back to the clinic, out on a walk, then got back to my work.


One morning I enjoyed this scrumptious snack of Tillamook sharp cheddar and Simple Mills crunchy pecan cookies. Awesome combo suggestion by Rachael!


This meal sure was tasty! I reheated some of our rotisserie chicken with the last of our sautéed onion, mushroom, rosemary, and peach mixture. I roasted Brussels sprouts with just olive oil, salt, and pepper. To round out the meal, we had avocado toast with everything bagel seasoning.


For lunch one afternoon, I enjoyed this heated bowl of organic shredded kale, roasted pesto potatoes and onions, sautéed peppers and onion, and pan-cooked seasoned tofu with roasted vegetable spread.


Another quick dinner was this bowl that included reheated roasted Brussels sprouts, canned wild caught salmon, avocado, Newman’s Own Creamy Caesar, carrots, jicama, red pepper, and bean + rice chips from Aldi.


It seems backwards, but I’ll be sharing this Quaker Pumpkin Spice Oatmeal in my post tomorrow. I had it this morning soaked overnight with cottage cheese and milk then topped with banana and pb. So tasty!


Lastly, I made this for our dinner Wednesday night that then doubled as lunch today: roasted Brussels sprouts with steamed-from-frozen broccoli, cooked quinoa medley (that I’ll also share in tomorrow’s post; I’m so backwards this week!), and hummus. On the side, toast with avocado and roasted vegetable spread.
