Weekend Recap

Hi all. I hope that where every you are, you are safe and well. This whole Covid-19 outbreak is so surreal and strange! I never ever could have imagined all of this, and it seemed to come on so suddenly. I know every day is a bit of touch-and-go. I wanted to share a weekend recap in the hopes to add some lighthearted content to otherwise uncertain time.


I started the day on such a delicious note! I warmed a sprouted whole grain tortilla with greens and then layered cheesy scrambled eggs, one cooked vegan sausage patty crumbled, avocado, and Siete chipotle hot sauce. I also had a cutie on the side plus a wonderful mug of coffee.


I came up with this outfit quickly and was really happy about it! I layered my fun bleached flannel over my Old Navy jumpsuit instead of wearing a cardigan.


The day felt really weird, and I admittedly did not handle it well. They’ve now mandated that we wear a gown and mask at all times plus have our temperature taken and logged daily. The masks have been proven to be ineffective at transmitting the disease if the individual is well. But I get that companies want to show they are doing something. So it is our reality for now.

Baby Girl was oh so snuggly! I sipped on Twinings Lemon Ginger tea while I waited on Matt to get home.


Dinner was a salad with steamed sweet potato cubes and sauteed chicken quick marinated in Greek dressing.


I didn’t take a photo of my snack, but we settled in and watched A Beautiful Day in the Neighborhood. It was really sweet! But it was a little odd. I suppose Mr. Rogers was in some ways but also genuinely an amazing person. I enjoyed watching it.


I woke up feeling really well-rested and good! I made Kodiak Cakes buttermilk waffles that I topped with ricotta and smoked salmon along with a side of lightly dressed greens and a cutie. This reminded me of a meal at First Watch, and it felt fancy.


I used nearly the rest of the mix to make mixed berry muffins that turned out so well. I managed to do all of this before even having my coffee too!


After showering and getting ready, I enjoyed a muffin with pb then headed out the door to go over to Kaci and Drew’s.


My spring-but-it’s-still-cold outfit. But I even should have dressed warmer because the temperature dropped more. Mahalo tee, Not Perfect Linen scarf, teal pants (the lighting was poor due to it being cloudy).


I swung by Mahalo and grabbed a half caf Americano. It was so refreshing!

We placed a curbside order from CFA, and I so enjoyed their spicy chicken salad! I love their avocado lime dressing.


I went with Kaci, Drew, and Drew’s parents to help his parents’ friends (a husband and a wife) load up some furniture as they are moving soon. They are giving away some, and they’re deciding on whether they want to give me a really cute “shabby chic” desk and Aztec rug. I’d be so grateful and would certainly take great care of them. I love when items have a story, and I would know where they came from.

It was late by the time I arrived home, so I had a snack-y dinner. These garlic and onion Triscuits with poppy seeds are so good!


I had a snack while we watched Spenser Confidential with Mark Wahlberg. I loved the movie! It had a number of funny parts as well as plenty of action.


We slept in again and didn’t get out of bed until 9:00! I had made two smaller waffles to use up the remainder of the Kodiak Cakes buttermilk mix, and I enjoyed them toasted and topped with maple plus a banana with pb and yogurt.

I gathered up donations to take to Goodwill (which I will need to confirm that they can accept them at this time), cleaned, and then ate lunch. I heated a tortilla with greens, hummus, and freshly shredded cheddar. I added avocado then folded it over and cut it in half. Carrots and orange pepper strips on the side. I then finished the last little bit of my Americano (I used my Pioneer Woman cup, and the ice still hadn’t melted!) with my last two Samoas.


Jackson snuggled himself in the middle of my donations. Doesn’t he look precious?


He’s so silly!


Kaci came over and helped me in a huge way! I had been planning to make this coffee burlap bag ottoman for months thanks to the free bag from Mahalo, but I was admittedly intimated by the project. She helped me to start stitching after I cut and ironed the six pieces. I followed this guide. I chose not to store clothes in it, so instead, I used poly-fil and then finished stitching up the side. I really love it!





I enjoyed tea, a snack, then we called it a night. I hope that you can find some calm and peace today and as we move forward in this time of the unknown.

Friday Finds + Favorites!

Hello, and happy Friday! These are some strange times it feels like with all the talk regarding Coronavirus. I am personally not pleased with how the media is reporting on it as they are invoking more fear and panic. But I acknowledge the severity of the situation, and my heart goes out to all who have been affected.

In an effort to bring some joy and light to an otherwise unknown time, let’s get on to a Friday Finds + Favs post. I just so happen to have thirteen things on this Friday the 13th. So let’s get to it!

(1) I found these earrings on Amazon, and I love them! I highly recommend them. They come in this case with a pretty bracelet as well.


They’re all really pretty, but they are not heavy at all. They give me Golden Girl vibes, and I’m here for it!


(2) I also bought this coffee grinder, and man is it nice! Alexis recommended it, and unlike our other one, it grinds consistently and is not super obnoxious in sound.


(3) Through next month, you can receive a free S’ip by Swell after submitting your receipt showing you bought $15 worth of particpating General Mills products. This website gives the details. I bought Larabars and then received this cute bottle.


(4) On our latest Target run, I saw these cute doormats that look so bright and cheerful.


Anyone else find these colors and the organaztion so lovely?


(5) I’ve seen several people share how much they love Hippeas, and now I see why! They taste really good but do not leave a weird taste in your mouth like some puffs can. Know what I mean?


(6) These are so good! Sweet and little spicy, and you can definitely taste the clementine flavor.


(7) I also have been craving wraps, and these sounded good. I can vouch that they are!


(8) Anyone else love hemp hearts? They have such a unique, nutty taste! This bar is chewier and a little different in texture, but that’s not to be a bad thing. I loved it!


(9) Matt made this meal on Sunday for himself, and we had some of the leftovers for dinner this week. It was so good! I had bought Private Selection smoked sausage many months ago and froze it. He cooked it, and then we enjoyed it with sauerkraut, steamed vegetables, Bush’s baked beans, and home steak fries. I ended up having half the sausage link and put the remainder in the fridge. ‘Twas satisfying.


(10) After taking a Ballet Sculpt class with Kaci and her friend at The Y, which was so fun (!), I came home and made this quick meal. Apple gouda bagged salad kit with avocado smoked salmon toast. Simi shared her meal prep thoughts recently that even if one uses frozen vegetables or products, bagged salad, canned goods, etc., the meal is still homemade. This was wholesome and so enjoyable. Don’t feel less than or intimated it you can’t or don’t want to make all things from scratch!

(11) They surprised me at my second clinic and got me a Lazboy chair! It’s super comfy.


(12) I finally tried my first embroidery project, and you know I had to choose an owl! I bought this at Target by Penguin and Fish. It was so fun, and you can reuse the owl stencil several times!


I added it to our right bedroom wall gallery.

Hitting the Highlights

Good afternoon! I sure hope the weather is lovely where you are and that you will be able to get out in the sunshine for a bit. It’s starting to feel like spring, and it’s really making me very happy!

Instead of sharing all of my meals, I decided to just share the highlights from my weekend for a fun change of pace.

I wore one of my favorite jumpsuits on Friday, and while it was really comfortable, I did need a jacket. The thing about TN spring is that it comes in waves. I’ve seen a meme circulating that is hilarious and pegs us in the “spring of deception”. No truer words have been spoken!


One of my clinic managers catered Olive Garden for lunch on Friday, and it was really enjoyable! Lasagna, salad, bread stick, and a nice pudding/mousse cup with a cookie crumb crust.


The babies and I snuggled on the couch Saturday morning while I sipped my coffee, and it always warms my heart so much!



After I got ready, I met with Kaci to attend a first birthday party for one of Drew’s second cousins. I so loved attending and being family with them! Drew’s family is so loving and kind. Kaci rocked her Not Perfect Linen dress – does she not look amazing? Her nephew took this for us – he’s good!


They had a taco bar with allll the fixins. I overfilled mine per usual, and it was messy and amazing.


They had chocolate, strawberry, and vanilla cupcakes, but I couldn’t resist the vanilla because it had sprinkles. 😉 Also, the cake bite was so good! Funfetti inside.

Would a weekend be complete without a Target run together? Nope! “Quick, look in separate directions!” Nailed it!


Then we came back to my place and enjoyed time with Rachel and Jackson. How adorable is he?!

We swung by a local co-op, Three Rivers, and we each chose a Spindrift to try. I have to say I enjoyed Bubly grapefruit sparkling water better, but this was tasty.


On Sunday I completed my first 45-minute Barre video by Simi, and it was so challenging but very rewarding! You can see where my cheerleaders plopped down to watch me sweat. 😉


Then I got ready, donned by thermals, and met with Kaci, Drew, Axl, and one of Kaci’s friends to hike at Baker Creek Preserve. The weather was spectacular, and we covered about 2.5 miles!


I was so grateful that I got to attend their weekly family dinner, and Drew’s mom made an excellent meal of hamburgers, seasoned baked potato wedges, baked beans, and corn on the cob plus brownies and ice cream. The laughter, conversation, and food filled my heart. Matt worked hard on his race car in preparation for a race this coming weekend weather-pending. We missed him!

I had to threw on my robe and ran outside to snap these because the sunrise was so beautiful! I saw the colors coming through our blinds even though they were shut. It was just so magnificent, and the photos don’t do it justice. Nor do the town homes, but I digress.

Friday Finds & Favorites!

Hello, and happy Friday!! I hope your week has been a good one. As always, please feel free to add your own finds and favorites in the comments! Let’s get to it, shall we?

First up is this delicious blueberry chia pudding that Matt made for us! He warmed frozen wild blueberries then added water and chia seeds, a little sugar, and maple, and he chilled it overnight. It then congealed into this great pudding texture.


I had it with cheesy avocado toast, apple with cinnamon, and a vegan sausage patty one morning. I loved this combo of flavors and textures!


Another morning I had it with pb and honey on toasted whole grain bread plus an apple on the side. Check out that drippy filling. Yum.


I recently made Ellie Krieger’s lentil tomato dish with ricotta that was oh so satisfying! The ricotta added a creamy, lovely texture and taste.


I also made her Ancho Black Bean Chili with Orange Essence. Holy smokes, it was amazing! We’re enjoying leftovers for dinner this evening. Mmm mmm.


Lastly on the meal inspiration front, I made Ree Drummond’s nachos but substituted one pound each chicken and vegan meat (Emerge from Kroger) for the beef. I didn’t layer them because the recipe makes a lot, so we’ll just build our nachos when we eat the leftovers. Otherwise, the chips would be soggy. I needed to have added more cheese, but it was still good.


Target finds! I wish I had a reason to buy them all, but instead, I chose to just take photos to share. The vase was only $5, but I am trying to be intentional. It is so cute, though! An owl humidifier. I mean, how cute! Cat-print sheets and ‘cat lady’ tee. Target gets me.

I did purchase this candle, and not only does it smell lovely, the container is really cute and can be repurposed!

I have still be in search of a good antiperspirant deodorant (nervous sweat probs, just keepin’ it real), and so far, this one has worked well! Anyone else struggle with this? It’s not that I get hot and sweat. I just have nervous sweat even when I don’t physically feel nervous. Maybe I’m just weird. 😉


I bought my first set of thermals from Target now that many are on clearance. I’ve needed some to layer with, and this brand is rather nice and comfortable if anyone is in the market for them.

I decided to put my pretty “vintage” bobby pins in my Summer and Rose trinket dish, and I love how pretty and accessible they are now! They’re too nice to put away in my opinion.


Kylie was incredibly sweet to send me these stickers of the cute girl and her haiku about dieting! She has an awesome line of these girls who are voices against dieting. Kylie now has included them in her Ig recipe videos, and I love them.


Our Lead RD surprised us each with a gift for National Nutrition Month + National RD Day, and I feel so fortunate to work with amazing RD’s and for an incredible Lead. This wireless mouse, complete in one of my favorite colors and personalized, is so thoughtful! I love everything down to the card design and the thoughtful message she wrote.

Now for some outfits I’ve loved lately! Kaci so kindly let me borrow this beautiful sweater that she got from Val’s Boutique. It is so comfortable and well-made!


It’s not a huge difference, but I’ve been enjoying trying different styles as my hair grows. I pinned back both sides, and I loved how it looked and felt.




I paired my Not Perfect Linen scarf with a linen dress I bought last year from Amazon. Complete with fun earrings by Bonnybee Designs, and Rifle Paper Co. Keds.


Natural hair aka no styling paste. It felt nice to wear it like this for a change.

Fresh Air Leads to a Happy Heart

Hello, and happy Monday and new month of March! Two days into the third month of 2020. Crazy!


I started the day with such a stellar breakfast combo that included a Figgy POGO by Sweet Earth Foods that was very enjoyable. I bought it with a coupon recently, and now I want to try their other flavors! It’s like a fluffy poptart met a Fig Newton. I enjoyed it with fluffy cheesy scrambled egg topped with hot sauce, avocado, and a cutie.


Kaci got to come over after work and hang out with me and the babies, and it was so lovely!

Once Matt got home, I whipped up dinner that turned out really well. I sauteed chicken tenders with some salt, pepper, and garlic I believe then I added a bag of fresh cauliflower hash from the produce department that I first steamed in the microwave, fresh turnip greens, and barbeque sauce. It may sound weird, but it was an excellent combo! I enjoyed mine with Bird’s Eye frozen lemony couscous and greens.


Rachie loves a good SnapChat filter. 😉


For a snack later that evening, I added beet powder, powdered pb, ground flax, ginger, a few raw oats, and crunchy nuggets to yogurt and had a crisp, juicy apple on the side. Matt and I have been watching a Netflix documentary on Formula 1 racing called Drive to Survive, and it’s been interesting!



We slept in SO well! I didn’t get out of bed until around 8:00. For breakfast, I made a Bakery on Main apple cinnamon oatmeal cup with milk then topped it with a vegan maple sausage patty. I loved the sweet savory combo. I also had an apple with pb on the side.


I call this, “cat book ends”. 😉


After getting ready for the day, I went down to the post office to pick up my first Not Perfect Linen dress!


They also surprised me by sending me a scarf! They always send sample squares of all of their linen colors, and I love that they do this for their customers.


For lunch, I heated an Amy’s Greek Spanakopita burrito topped with hot sauce and enjoyed with baby carrots.


For a sweet finish, I enjoyed one of these chocolate almond biscotti from Aldi. The almond flavor was prominent and very good!


I then made a Target run and found some great things that we needed! I impulsively grabbed this from the cooler at the checkout line, and while it isn’t sweetened, I still thought it was really enjoyable and refreshing. I loved the grapefruit flavor, and despite it being carbonated, it didn’t upset my stomach. Win-win.


The latest Pioneer Woman Magazine edition was delivered, and Rachel and I couldn’t wait to dive into it!


Mid-reading, I grabbed a snack of hidden crunchy nuggests cereal with cuties and almond milk. It was just what I was craving.


Jackson then had to join! We were learning about DIY facemasks at this point.


I received a notification that my trial FabFitFun box had been delivered! While I would love to maintain this subscription, it’s too costly for our budget at this time. But for just $5 and change, I received this small but amazing box.


The babes helped me open it.


Jax couldn’t care less about the box contents. He just wanted the box!


I’m very grateful! I received Tula probiotic face wash, Whish overnight face mask, YumiKim travel bag, and the beautiful Summer and Rose trinket dish.


I completed one of Simi’s Barre videos and it felt so incredible!! My body was definitely challenged but in a very good way. I didn’t not have judgemental thoughts if I had to take a break or take a modification, and that is how movement should be for us.

I showered and then got to work making “Sloppy Joannas” by Hilary’s. I had to make substitutions because apparently I was not careful when I last grocery shopped and forgot some things. I used a yellow pepper instead of green, 3/4 c ketchup and 1/4 c smoky whisky bbq sauce, and spicy brown mustard. Kroger also didn’t have their Adzuki bean burgers, so I used the root vegetable variety. Matt thought the sauce could be decreased, but I loved it as is, so feel free to play around with it! We enjoyed ours on warmed Udi’s GF buns with a spinach and avocado salad on the side.


As we watched the Formula 1 program, I noshed on a banana with cinnamon, nutmeg, and pb plus herbal tea with honey.



Once again we slept until the eight o’clock hour, and it felt marvelous. Once we made our way downstairs, I finally opened one of my Kodiak Cakes mixes, their classic buttermilk, and made waffles in my baby Dash waffel maker! I topped mine with Matt’s blueberry chia pudding, pb, and maple. Mmmm mmmm mmm. So good.


I then rolled up my sleeves and made muffins following their recipe on the back of the box. Because our bananas aren’t ripe enough yet, I omitted them and added Greek yogurt and frozen wild blueberries per the recipe variation.





Because Matt can’t have any (damn Celiac), I took six to Kaci and Drew. I packed up my lunch to enjoy over at their place: spinach with Sloppy Joanna and baked polenta. Excellent quick meal full of flavor! I ate a cutie then accompanied Kaci on her Target run. She found new bedding that is so pretty! She also scored a heck of a deal on it and their new flannel sheets.


Before embarking on our hike, I ate one of my muffins with ricotta as a “frosting” on top. Fabulous!


The day could not have been more beautiful. The sun was a welcome sight as was the mild temperature. We hiked at IC King Park and covered about 2.6 glorious miles.



Kaci took this portrait mode with the front facing camera on her iPhone 11, and it makes me wish I had this version! I want to wait to make such a big purchase, but I’m living vicariously through her. Also, peep Drew in my sunglasses reflection, ha!

Once I got home, I snacked on some carrots and hummus while the babies ate then I vacuumed our home.

So, you know how I mentioned I didn’t shop well last week? Um, yea, I didn’t have what was needed for the Ancho Black Bean Chili I planned to make, *but* I was proud of these nachos! I cooked our last chicken burger and divided it over our blue corn chips and topped them with canned pinto beans and Tillamook thick shredded sharp cheddar. I warmed our plates in the microwave the topped our nachos with tomatoes, avocado, Greek yogurt, and hot sauce. I sauteed turnip greens and added the last of our jarred pickled jalapenos plus some of the brine. This was fantastic! Something that I still am so grateful for is the freedom from my disordered eating and food rules. In my past, if I didn’t know all of my meals for the day or if plans were changed, it caused me so. much. anxiety! Not anymore. I love spontaneity and being able to go-with-the-flow! If you feel stuck in food rules, know there is a life outside of them, and you can get there. ❤


I prepped our food and my clothes for today then promptly sat my toosh on the couch with those same crunchy nuggets in our pb jar with unsweetened vanilla cashew milk and an apple. So good! Even though it is simple, this combo was perfect. We finished watching our program then made our way to bed.



I apologize for the poor lighting (thanks, Mother Nature for the rain. We really needed more.), but here is my new dress and scarf! I layered it with my gray sweater from Amazon, belt from Planet Xchange, and shoes from Target.

Friday Favorites + Finds!

Happy Friday! I certainly hope everyone had a great week. I’ve been saving a number of favorites to share, so I will just jump right into it.

While this weather has been all over the place, I celebrate any day that is sunny and mild! Only a few days before it lightly snowed, it was so warm that I could walk in a light jacket. Mother Nature is keeping us on our toes for sure.



When I returned, Rachel was waiting in the window!


We made breakfast-for-dinner that included a warmed salad, over easy egg, hot sauce, and GF Schar croissant. This was delicious! I’ll need to get more of these croissants soon.


For breakfast one morning, I had two types of toast: carrot protein bread wtih Matt’s strawberry chia jam and cottage cheese and one slice of thin whole grain with the same chia pudding and pb. A banana on the side. I really enjoyed this combo!


I had a coupon for a Tillamook product, and this farmstyle thick cut cheddar is oh-so tasty. I love how thick it is, and the strong, sharp flavor is very pronounced.


I made Alexis’ chickpea avocado salad but made some substitutions. I omitted the onion and celery and added additional red bell pepper, used spicy brown mustard instead of dijon, and used frozen avocado instead of fresh. It was so great! We had it as a sandwich and over a salad with corn chips for two lunches during the week.


I found these falafel burgers at Ingles, and while they could’ve use some tzatziki, they were enjoyable. But really, look at our silly photo bombers!

Before completing a Barre3 flow at home, Jackson insisted on being snuggled. He is so stinkin’ adorable!

My wonderful hairstylist shared this with me. It’s close to the process we’re using to grow out my locks. 🙂


Speaking of which, I can now tuck my hair behind my ears. It’s the little things!

Such a powerful reminder!


Speaking of control, we cannot manipulate and control our bodies with restriction.


We can, however, listen to our own intuition and engage in healthy behaviors. Simi led a free series that delved into a healthy relationship with movement. It was so insightful and supportive!

Much-Needed Twin Weekend!

Hello, and happy Monday! While I’m truly grateful for every day that I wake up well, I wish I could rewind to Friday. Last weekend was so fun and so needed!


I began the day with an oatmeal muffin made from this stellar oatmeal cup, and I topped it with Greek yogurt and pb. So good!

My look for the day. 🙂

This popped up on my memories, and I had to re-share it. That crimped hair was s’cute!


I had a great day at work then made a Target run. I resisted this avocado pinata, but how cute is it?!


I found a lot of goodies including this limited edition Larabar. I was super hungry, so it was extra tasty.


I cared for our sweeties, unloaded my purchases, packed to stay with Kaci for the weekend, and I grabbed food provisions for dinner and the weekend. Drew went hiking with his dad and a few others, so it was a girls’ weekend! Matt came over, and enjoyed dinner with us, though, and it felt like old times. Loved it!

Dinner was soybean-based pasta with Aldi pumpkin pasta sauce, cheese blend, roasted eggplant, and a salad mix. I ended up getting some more sauce. We watched Jeopardy, which we used to do together as well, and my heart was happy.


Kaci played around with her Memoji on her phone, and we were in tears from laughing so hard! She upgraded her phone and can make her Memoji mimick her facial expressions, and it was just so hilarious. I needed that laugh! It also partially removed my mascara for me. 😉

Kaci received a year of Disney + for free with the purchase of her new phone, so we watched Sleeping Beauty. I just love Maleficent! She’s so evil and wicked but fascinating.


After sleeping well and enjoying a banana with pb and a mug of coffee, Axl, Kaci, and I loaded up to pick up some amazing pastries from Wild Love Bake House. They always have so much to choose from that I feel overwhelmed! So I got an assortment.


I had this smoked salmon croissant that was in-credible.


Kaci enjoyed this butternut squash savory croissant, and we saved the other two for later.


After running one more errand, we loaded up to head out to the lake house! Axl was not pleased when Kaci had to run into Wal-Mart. He loves his mama!


I enjoyed this while we finished the drive out there.


My heart and absolute pride and joy! I sure am grateful for this piece of heaven on earth.

Keeping the ducks at bay.


We enjoyed a later lunch before getting to work. I had some leftovers from the night before plus this plant-based queso with carrots. I ate an apple, then it was time to tackle the yard.


A great deal of branches, leaves, and debris had collected from the storms, so we rolled up our sleeves, got out our rakes, and we moved so much up to the burn pile!

We relaxed on the deck in the sunshine before deciding to run to the store once more for a snack. We packed well but did forget a few things. As we were pulling out of the driveway, we saw a number of deer!



Stepped back in time. There used to be a Piggly Wiggly in town, but it closed years ago. This store is located in Spring City. I saw a number of overalls and heard some heavy accents, but it was so fun to shop there.


I grabbed this peach-flavored Hint water and really enjoyed it!


Snack time when we returned: blue corn chips with gouda cheese. Mmmm mmm

We played Kings in the Corner, and I won all three games! We watched Cinderella, and despite seeing it so many times, I loved watching it. Love classic Disney movies! They must’ve put up another cell tower because our service was awesome. We could stream movies without any problem.


Not great lighting, but this meal was spectacular! Kaci brought TJ’s barbeque pulled beef and TJ’s grain blend, and I tossed together a bagged maple bacon salad kit + avocado. So much flavor!


I decided to pick up two oat milk-based Chobani cups at Target, and I tried this one with some pb. It was ok. A bit runny and different, but it was fine.

We watched The Little Mermaid, and again, loved it! I don’t care how old I get, these movies bring out the inner child.


One of us couldn’t hang, though. He was a big help keeping the geese and ducks away! Plus he whittled a stick or two. 😉



Unfortunately, I didn’t sleep *as* well as I normally do out there because it was so cold. Kaci is tougher than me apparently, but I just hate being cold.

She got up a bit before me and captured this amazing sunrise! I wish I had been up to witness it. It looks so magical.


Despite staying at the lake house so much while growing up, I never witnessed the birds feeding across the lake. It was amazing! So many birds dove and caught minnows and such for their breakfast, and it was like watching a nature documentary.

I made an oatmeal cup with Cruze milk and topped it with pb + an apple on the side. I loved this flavor!


Thanks to Drew, we now have a stove-top percolator and a drip coffee maker out there! We forgot coffee filters, so I gave this a shot. ‘Twas fun and tasty.


Axl kept a close watch on the bird activity all morning. Is he not adorable?!


We watched Dumbo while we sipped our coffee, then we showered and ate lunch. We split the last croissant and the remainder of our salad. We also dipped carrots into the queso, and then I had my half of the fruit tart with sprinkles that I got at Wild Love.



We must’ve taken 6+ cart fulls of sticks and leaves to the burn pile plus we carried bigger branches by hand. I was so thankful Kaci suggested we spend the weekend cleaning up the yard ourselves. We do use a fabulous yard service company during the summer months to make sure she looks well-cared for and nice, but getting out there to do some work ourselves gave us pride. Kaci took these after we were finished.



I dusted and vacuumed the house while Kaci washed the dished. With sadness in our hearts, we packed up our things to head home. I’ve always dreaded leaving.

I think it’s safe to say that Axl had a blast!

Once I got home from Kaci’s, Jackson inspected the laundry situation. He’s my laundry helper!


Rachel was just interested in burrowing herself underneath the pile. Ha!


I made a quick plate of nachos by microwaving thick shredded Tilamook sharp cheddar over blue corn chips then topped with salsa. This was exactly what I was craving!


I later got a mug of Cruze chocolate milk to sip on while working on a DIY craft I hope to complete soon.


But these munchkins made it hard to make any progress! It’s okay, though. They’re allowed to interrupt m to cuddle and be by my side. ❤ ❤


For dinner, I made myself Shakshuka with the leftover pasta sauce simmered with sauteed onion, roasted garlic, fresh spinach, and the last of our pasta. I topped my eggs with Siete hot sauce, and my gosh, this meal was amazing! Matt had rotisserie chicken over a lovely salad, and he gave me a bite of his while I gave him a bite of mine. Sharing is caring!

I slept very well thanks to being nice and toasty. Jackson didn’t bang on the blinds when I was gone, but he was back to it! Something about mama being home. 😉 I hope you all have a fantastic week!

Love Is in the Air

Hello and happy Monday! I sure hope your weekend was filled with fun and love.


I began my day with leftover pizza topped with Siete hot sauce, wilted greens, two sunny side up eggs, and cutie.


I was craving sweet, so I had some local salted chocolate with my coffee. Wonderful choice!


I wore a somewhat themed with dark red tights and some pops of pink in my dress.


These memories warm my heart so much!!

Despite what his face looks like, Mason was purring up a big storm! I miss our big, brave boy.


He was always at home in my arms, and I always felt so much peace.

I think this was taken on Valentine’s Day 11 years ago. We were youngins.


Lastly, Friday marked six years as a Registered Dietitian!


Despite being exhausted, Matt and I went out to dinner to celebrate. This was just over a month away from his Celiac Disease diagnosis. 😥


After a great day at work, my sweet friend Andrea and I went by Mahalo for their special of buy one drink and receive one for free! I chose their Red Velvet Beet Latte, and she got a caramel latte. Both with pretty hearts!


I wasn’t feeling like cooking, but with the need for GF, finding delish take out is a chore. We decieded to order from Broadway Market, and they did not disappoint. I chose their vegetable soup, salad, and grilled sweet cornbread. Matt had a chicken poke bowl and gave me a few bites.


For a dessert, I thoroughly enjoyed a banana split with cinnamon, Greek yogurt, pb, and Love Grown Comet Crispies.


We decided to watch Zombieland: Double Tap, and we thought it was really funny! I don’t usually pay attention to ratings because they don’t always align with my thoughts. I loved the first movie, and this one gave me some good laughs.


I went simple for breakfast with fresh cherries and frozen wild blueberries thawed in the yogurt a bit, cardamom, and tahini.


I had a slice of the carrot protein bread from Earth Fare toasted and topped with strawberry jam.


Those morning snuggles! I started to read my book, Suffer Strong, and already the words are very powerful. I need to devote time each day to read!


I got ready and met Kaci and Drew at their place to go on a lovely hike. I ate a Clif Bar, carrots, and cucumber before we left.

This tree was bent very funny, and it looked like an “F”.


We found these random stairs, so we took turns posing with our trail guide, Axl Rose!


We hiked for about two hours, and I think we went 3.5 miles. It felt so good! It was very chilly, so I should have layered more. Live and learn.

I ate some of Drew’s woven wheats and pb because I was a starvin’ marvin when we returned. Was just what I was craving!


I went grocery shopping at Ingles for a change of scenery, and it was fun because they do have some different products than Kroger. I found some good things!

For part of dinner, we had tomato red pepper soup with freshly grated mozzarella, which was so delicious.


Then a huge salad with Ingles rotisserie chicken salad, pickles, and…drumroll…GF croissant! It is made by the brand Schar, and it actually was made with wheat that was said to be processed to meet the GF standards. I had to do a double check and read the label carefully because there have never been GF products that contain wheat. It tasted amazing!


Dessert included apple, Crunchy Nuggets, butter toffee pecans, and milk. The apples I bought are rather bruised. 😦 I tried to check the bag well, but I guess I need to improve on my produce quality review.


We went to bed around 11 and slept well, thankfully.


I received twelve free Kodiak Cakes Strawberry Chocolate Chip cups, and I made one for breakfast. I used milk and measured it versus using the cup’s fill line. It cooked up beautifully!



I had a banana and pb on the side.


I also received all of these goodies courtesy of Bakery on Main! I submitted some of my favorite oatmeal creations using their products to participate in their Instagram contest, and I was so grateful to win!


I showered and got ready to spend the afternoon with Kaci as we checked on our lake house. Matt and I split bagged salad that I added greens to plus a slice of the carrot protein bread with hummus.



I also bought two boxes of Girl Scout cookies from one of my sweet friends, and I enjoyed a few Samoas with decaf coffee as we headed to the lake house.


Thankfully, despite this awful rainy weather, it looked good! You can see the sticks and debris along from one side of our cove to the other where the water came all the way up into the yard. Kaci and I are going out next weekend to clean the whole yard.

Her hair got in my face, so I tried to gently put it to the back. Unfortunately, my ring snagged it, which of course made me cheese. She wasn’t impressed with it. Hahaha


I wish we could’ve just stayed, but sadly, we had to make our way back. We enjoyed Red Hot Blues with hummus and then I got a few carrots to finish off my hummus.


We snuggled with Axl, Jax, and Rachel, and then she headed home. Matt and Drew had been working all afternoon on installing a sump pump into their basement because anytime we have really heavy rains, it floods horribly. I hope this helps big time! I love that we four can be there for each other.

I got off my peach and got to work on house tasks and meal prep. I roasted two each sweet potatoes, bulbs of garlic and sheet pans of vegetables: carrots + parsnips and broccoli + Brussels.

I baked chicken thighs marinated in Greek vinaigrette that we enjoyed with a sweet potato half seasoned with cinnamon and the roasted vegetables.  It was really good!


After putting away laundry and prepping food for today, I settled down with a chopped apple, Greek yogurt, powdered pb, whole meal ground flax, and shredded wheat plus herbal tea with honey. It was just what I was craving and needed to feel nicely full.



I enjoyed a bowl of Bakery on Main’s Maple Multigrain Muffin oatmeal made with milk + water and topped with pb and chia jam that Matt made on Saturday evening. I enjoyed my banana on the side. Matt mixed warmed water, strawberry jam, maple, and chia seeds together and allowed to congeal over night. It’s delicious!


That sums up our fun weekend! I love a combination of plans, spontaneous plans, fun, and downtime. It seems this weeekend had a combo of all of the above. I sure hope your week is off to a great start! Please feel free to share in the comments any fun you had and/or delicious food you enjoyed.

Friday Finds + Favorites!

Hello, and happy Friday! To anyone who celebrates it, happy Valentine’s Day. 🙂 We don’t acknowledge it much, but I love to have fun with the red and pink theme. Other than that, ’tis another lovely Friday to us.

First up is Lil Bub’s out-of-this-world coffee. It is amazing! Sweet Lil Bub left her earthly body in early December, but even in her passing, she’s still working hard to help fur-babies in need. We were both so very pleased with this robust, balanced, flavorful coffee. Highly recommend it!


In continuing with our coffee theme, Kaci and I saw these Clif Bar flavors that sounded quite delicious. We each bought one box and shared the two flavors. My only question is if one bar has the caffeine content of one shot of espresso, will I be awake at bedtime if I eat it later in the day. Hmmm, time will tell!


You may recall when I shared I was accepted into Kodiak Cakes’ RD Program, and I have been enjoying my involvement! Unfortunately, Matt hasn’t been able to try anything because Celiac. Such a bummer. I found this cup at Target for him to enjoy. He said the flavor was really good, but it didn’t cook up quite right. A friend told me to measure the liquid versus using the fill line because it can sometimes be too much. I made a cup that was the perfect consistency, so I’ll be getting him another to try!


How adorable is this mini waffle maker?! Also, Jax photo bombing is so stinkin’ cute! Since I have three full-size boxes of Kodiak Cakes pancake mixes, I will be hosting a girls’ brunch with Kaci, Sara, and Susan. I did not want to use our waffle maker for fear some of the gluten would not be fully cleaned off such that Matt could become sick when he used it. So I snagged these cutie at Target for $10.


Speaking of mini things, look at this adorable beebee basket! I got it from a local vendor that was setup at The Golden Roast’s opening.

While I truly enjoy my coffee black, I love to add a flavored creamer at times for a fun change of pace. It also is wonderful over a bowl of cooked oatmeal, added to cereal/yogurt/smoothie, in overnight oats, and so on. This flavor is so tasty!


For dinner one evening, I jazzed up a box of Modern Table Meals vegan mac ‘n cheese that turned out wonderfully. I cooked it on the stovetop according to the instructions and used macadmia nut milk, butter, and added more freshly shredded sharp cheddar. I then mixed in roasted broccoli, divided the pot among two ramekins, sprinkled GF bread crumbs on top, and baked them. Felt quite fancy for a box mix. 🙂


Kaci so kindly allowed me to borrow two of her super pretty and comfortable sweaters from Val’s Boutique here in Knoxville. I love them! The orange was such a cheerful color, especially since it’s been so rainy and dreary.


This green color is so pretty, and the ruffles matched my mustard macrame earrings perfectly!


I think this stool or end table is so cute! I didn’t bother asking about the price because I know we don’t “need” it. It’s for sale at one of our vintage shops.


I’m so excited for this book to arrive! Katherine and Jay Wolf share how their lives forever changed when Katherine suffered an almost deadly brainstem stroke at 26. I started following her on Instagram, and she has such a positive, real, amazing outlook on life.
